This is a very good question. The answer to this question can be either way, so it is optional to keep the existing sprinklers when it comes to artificial grass installations. In my personal opinion, I would like to leave the sprinklers in: you can always manually turn it on to help cooling down the turf, or simply rinse off the turf when needed. It will not necessarily  cost you extra from the installation standpoint, your installer can simply cut out the holes for your existing sprinkler heads, time spent on doing this can easily offset the time to cut the sprinkler heads and cap off the pipes.
